Ribs in. Grill set to 240
Added sausage for snacks and sprayed ribs
Bumped grill to 245 to better maintain 240.

Odd spike after opening and closing. No temp change on my part
Thoughts on spike. I had the lid open longer than normal. With the new thickness of the steel when I closed the lid things heated up quite a bit. Seems recovery now is fast and if not careful temp can ramp up fast
Comedy of errors. Decided to actually sauce the ribs. Squeeze bottles lid wasn't tight. BBQ sauce galore. Ran to get paper towels as it was way to much for the 2 racks. Temps are screwed for now.
Last check. Letting sauce set after a new lite brushing. Internal temp on ribs are in 190ish range.

I think the grills internal Thermo is dropping to fast and when I closed the lid the thicker steel has retained enough heat to allow a faster recovery.

I can taste the freezer burn. These have been around for a long while. Beyond that, much better than last night's pre marinaded crap. I have new hope in this grill.
