Travis - Memorial day beef ribs

Making some beef back ribs for memorial day. I got 2 racks from Costco that looked real meaty. They weren't a great price (at 3.99 / lb for mostly bone), but no beef is, these days. Using big bad beef rub, KBB, and Kingsford mesquite chunks.

3 Tbsp ground black pepper
1 Tbsp white sugar
1 Tbsp onion powder
2 Tsp mustard powder
2 Tsp garlic powder
2 Tsp chili powder
1 Tsp cayenne powder
Trimmed and salted last night. Built my rub this morning while the charcoal was lighting.

Added a couple chunks of wood


Turn the ribs over and change positions...



Added some charcoal and had a taste... So good!


Just checking on things... Still pretty tough to poke. Only showing as 180 in the middle.


Roasted corn and ribs coming off! Also, corgi!


Finished ribs! So tender and tasty! No sauce necessary...
