Adjusted probe for better accuracy
Upped grill to 275. Added bottle of hot sauce, brown sugar, butter, and apple juice and covered. Plan to pull at 205 for rest.
Set grill to warm. Meat hit set point. Will rest for 1 hour then shred it.
Pulled off smoker to start shredding.
