Doing an overnight cook to prove out the idea of using this cast iron grate as a low-and-slow heat deflector in the Kamado Joe Classic. I am gonna run the grill with the FireBoard at 225°F and let this butt cook overnight. I am just gonna let this butt cook unattended, unwrapped, and unopened until the internal temp hits around 200°F and then I'll open the grill and have a look..... unless there are any issues that need to be checked....
