Point & Flat go on top rack
Wrap brisket, insert probes, move to second shelf
Add chicken to top rack

Flip chicken over
From 4:18 - 4:28: pulled chicken from smoker, grilled the bottoms on Weber (direct heat), sauced, the back on Weber (indirect) for five min to set sauce 4:33. Finally boxed and last photo is of then in the box after 15 min later @4:50 ( hotter than shit - to hot to handle)
Pulled flat, wrapped, put in cooler
Sliced burnt ends back in smoker

Pull burnt ends, rest them covered in pan about 15-20 min, serve. Delish
Slice, sauce, and box brisket flat.
