Using a large sweet potato as food test
One ambient probe at grate level
One food probe in baked potato
Will try temperature rise to 110C, then 120C (225 and 250F for typical smoking temperatures)
Maximum fan speed set to 50%
Initial overshoot to around 136C. Closed top vent down further. Set max fan speed to 30, later on, max fan speed was reduced to 20%
Result: Cooker held temperature until approx 3.45am - over 15 hours on a half load of charcoal. Towards the end, the fan was on more and more to try and keep the heat up - which is to be expected. Interestingly, the sweet potato never got above 87C - maybe due to evaporative cooling?
