Beef Short Ribs from Winco (choice). Trying to stay from 225-275. Started with 2 chunks of cherry & pecan wood apiece.
Plan was to check internal temps after 4 hours but I’ve decided to move the ribs around after 2 hours to help them cook more evenly (some are closer to the coals than others). After setting everything up, I already like the S n S because it all makes sense!
After 2 hours, 10 minutes. In addition to the ribs, look at how much charcoal & wood is left.
Beef short ribs after 4 hours; internal temp 205-207. They are done!
