Luann - Pulled pork
Luann is a large bone in pork butt from Fred Meyer (I didn't weigh her or look at the weight on the package). I figured I'd put a probe on the grate, as well as in the port... I've been all little skeptical of the ambient with some of the latest cooks. Looks like I was right.
I salted her this morning and am using my usual twist on Memphis Dust. Smoking on my 14" Napoleon Apollo with KBB for the primary fuel, and apple wood chunks for smoke.

3 Tbsp packed dark brown sugar
2 Tbsp white sugar
2 Tbsp cayenne powder
1 Tbsp paprika
1 Tbsp garlic powder
1.5 Tsp ground black pepper
1.5 Tsp ground ginger
1.5 Tsp onion powder
1 Tsp rosemary powder (smash 2 Tsp)








Got woken by a low temp alarm 15 minutes ago. I guess I slept through the first one (45 minutes ago). Adjusting my alarm settings, so if this were to happen again, maybe it'll wake me before my coals are nearly gone.
It looked like the new coals were catching, but I,m keeping an eye on things until the temp starts to recover.
Still tons of rain out there...
