Using full basket of Fogo charcoal. Started fire, lid open for a few minutes, then closed lid with top and bottom vent fully opened. When dome temp hit about 200 degrees, opened lid, inserted PSWoo with plate setter and grate. Installed Fireboard probes, attached fan and turned on Fireboard. Set top vent to only open a crack.
Fan damper set to about half closed. App set to automatic for fan and controlled by grate temp. Second food probe attached to dome thermometer with a clothes pin.

Open lid to check temps with Thermapen. Temps were consistent with the Fireboard probes. Potatoes starting to soften, but not there yet.
Bumped temp to 275 degrees.
