Two 9-pound pork butts on the Kamado Joe Classic 3 using the heat deflectors instead of the SLoROLLER. Gonna cook at 225-250-ish overnight in some peach smoke....
Left one is probe tender at Bout 198F internal.. right is not quite ready yet...
