club 991 - pork butt smoke
17 hours, 31 minutes
2x 10lb Boston butts. Smoked for the race team weekend.
Pork in, first tray of pit master pellets.
Good smoke level, 2hrs in. Getting colder out, so not nearly as thick as it appears in the pics.
FIRE! The amaze-n smoker caught a draft. Flared up. Caught it quick though!
Pellets reloaded post flare-up, hopefully back on track. Curse you amaze-n-smoker...
Watching it like a hawk as it creeps over set point... wind is moving out there. The amaze-n has burned me before. #literally
Hot and fast burn on the maze, moved some coals off the main burn line to slow it down.
Yuppp, another flare up. Time to fully reset the maze.
Set point is 231 on the Smoker. Monitoring.
Rack Swap on the butts before bed. Slight pellet adjustment.
You didn’t think I’d let this slip by right? Meeting up on temps deep in the cook.
Gear up for a long stall at this temp, I’m not using the foil crutch on these butts since we have all the time in the world.

Quick pellet check before bed, looks like we have enough to run late.
Actively monitoring again.
Quick check on things. Pellets went out sometime in the evening, relighting.
And done! Pulled about an hour later.
