Started prep day before at 10:00pm. Injected with Kosmo pork injection, put SPG rub, 1part salt, 2 part pepper, 1 part garlic







Season pork but with Kansas City Championship bbq rub. Add 2 water pans. Set super smoke. Place on Ironwood 885 at 7:45pm




Spritz with 1 part apple cider vinegar and 1 part water. Rotate the butts since they were 10 degrees different. Bump Traeger temp to 225 until butt reach 165 then will bump to 275.









Bump temp to 250 degree Traeger
Spritz and rotate the butts. Bump temp to 275 Traeger
Wrapped small butt in aluminum tray and foil

Wrap big butt with aluminum tray and foil
Took out little butt, wrap in towel and place in oven.
Big butt rest for 2.5 hours. 7:35pm


Rest small butt for 1.5 hours. 5:50pm
