St Louis ribs rubbed with A&O Char Siu, and smoked with 2 chunks of plum wood and KJ Big Block charcoal.
Using the Adrenaline Barbecue Company Charcoal Basket and Drip 'n Griddle filled with hot water.
Fire battled to stay at 250F, so I tipped the coals into the Summit and used the deflector plate. ABC Charcoal Basket doesn't work well with lumpwood charcoal.
