Adding another log and misting down the flat, it’s getting a nice colour and the crust is setting up.
Tending to the fire and adding a log... rotated meats and misted them down, will wrap at next log

Added charcoal now the logs have burned down and the meats are wrapped!
A nice heady IPA
Point is done, venting off then will go into hold.
The flat is done.
The hard works done, brisket is resting so it’s time to unwind... keeping some heat in the pit to finish the brisket.
