Frank - Easter Brisket

Brisket for Easter, we'll call him Frank. Rub adapted from big bad beef rub on amazingribs. com. Trimmed and salted about 24 hours before starting the cook. Got a couple of snacks cut off of this one.
3 Tbsp ground black pepper
1 Tbsp white sugar
1 Tbsp onion powder
2 Tsp mustard powder
2 Tsp garlic powder
2 Tsp chili powder
1 Tsp cayenne powder
16 lb packer brisket from Costco. Purchased and frozen in February.
Using Western brand mesquite chunks.

Add charcoal, big snack comes off
Added charcoal and rotated Frank 180 degrees.



In the cooler, dinner scheduled for 100 minutes from now...
