Double Smoked Chuck Roast

Salted two 5 pound chucks yesterday afternoon. Rubbed with BABR at 8:00 am when I lit fire. Let roasts sit on counter until put on BGE. Overall cook time was about 11 hours. Next time allow for 30 more mins for second smoke.

Lit fire at 8:00. Added 3.5 oz cherry wood.
Lid 290; meat fell on probe. Next time tie both roasts. Moved them around.
Flipped roasts
Moved roasts to pre-heated DO. Reconfigured BGE. Big Chuck cut into two pieces.
Brought meat in to shred.
Shredded beef back on.Added a bit of rub, cumin, chipotle and beef broth. Small piece of cherry wood added to coals.
