Plan for first brisket
Got a 17 lb choice front Costco, have a yoder 640s. Want to serve at noon on Monday. With some coaching from a friend in Texas was thinking of doing a goldees influenced approach:
1. trim tonight (Saturday night) and get the rub on
2. Put it on the smoker Sunday morning (7-8ish) - will throw a smoke tube in there and a water pan
4. Maybe spritz hourly after 4 hours
5. When it gets to probe tender (195-203) eta 9-10pm on Sunday, take it off and cool to 160 Internal temp
6. Add smoked tallow and wrap tightly in foil and rest on smoker as low as I can go (150-170)
7. Carve and serve for lunch on Monday around noon
