~10-12 lb Pork shoulder. Mustard rubbed and coated with KC Joe's big meat rub 18 hrs before. B&B lump (75%) & Kingsford (25%) to fill gaps. Half chimney starter briquettes. Top vent open 100%, minion method for coals. Pecan and apple chunks buried in coals.

Added 2 half fist size hunks of firewood oak because I didn't have enough wood.
Added more charcoal. Looking back, probably didn't need to add more coals. Cook was much shorter than expected. Pit ran warm for the last 3rd of the cook.
Added 2.5 lbs wings. Pork shoulder bark looks amazing.
Put pork in pan & wrapped in foil. Top rack has corn and salmon. Bark looks great!
Pulled pork from smoker & rested in off oven for 3 hours. Still piping hot after rest. Really good results! Added ~1 to 2 tbsp rub to collected juices, stirred to dissolve then poured over and mixed into pulled meat.
